Looking ahead to a new season, these are the standout spots at the top of our editors’ list for fall.

Elka: A four-cabin wellness getaway and nature retreat in the Catskills with an emphasis on slow living, intentional design and sustainability. A complete reset coming this fall.

Under: A one-Michelin-starred restaurant in Norway that’s half submerged in the sea in a structure designed by Snøhetta.

Sibbjäns: A just-opened farm stay in Sweden. Looks so cozy and has a full spa opening in time for next summer.

Cherry Lane Theatre: The famed theater reopens next week in the West Village after a two-year renovation by A24 studio, with curated programming and a restaurant from the Frenchette team.

Portugal’s barefoot-chic beach town of Comporta just welcomed a stylish new addition by way of Caché Comporta, a collaboration between Paris’ Caché restaurant and Comporta’s Quinta da Comporta hotel. Set in a beach hut overlooking the coastal dunes, the Philippe Starck–designed space has a nautical-cool aesthetic and a delicious Parisian-influenced seafood menu. It serves some of the best food in town—think sea bream carpaccio, lobster linguine, a delicious catch of the day, and fluffy madelines with miso caramel for dessert. We dined there twice on our recent trip…and next summer, we’ll return to stay at Christian Louboutin’s new beach hotel in Melides—which will be the sister hotel to his already open property, Vermelho—and have several more meals here.

Fall is here and we have European cities top of mind. Amsterdam, to be precise, particularly with news of a soon-to-open cafe from the folks behind some of our favorite spots in the city (Café Twee Prinsen, Bakkerij Louf, Cornerstore, & more). The newcomer is Wilhelmina Cafe, which is set to debut later this month, serving bites all day long, from baked goods and coffee in the AM to small plates and natural wine in the evening.

Between Marseille and St. Tropez and a short ferry ride from Hyères is the small, laid-back island of Porquerolles, which is also a protected national park that boasts crystal blue water. We researched and planned very little (a rarity) for this trip, and tried to plug into the local pace of the island as much as possible. Thankfully, we picked an exceptionally special hotel, Le Porquerollais, which has a lovely owner who shared the island’s greatest hits. Some favorites:

Le Porquerollais: This is one of the island’s best restaurants (something of a local watering hole), and a six-bedroom hotel. The decor is as charming as the staff: part nautical, part Balinese, every corner tells a story.

Fondation Carmignac: Carmignac boasts an impressive collection (Yves Klein and Helen Frankenthaler were among the artists included in this year’s exhibit). A must-book, and be sure to explore the gardens, which are equally as special.

Domaine de l’Ile: An organic vineyard that hosts lunches at their restaurant La Table du Domaine de l’Ile, and it's well worth it for a holistic experience of the domaine. The property is owned by Chanel, but still low-key enough to eat in your bathing suit—which we recommend you do, since there are several beaches within biking distance.

Swimming, Hiking and Biking: There are no cars allowed on the island, which makes renting a bike and hiking essential. This also means that the beaches and swimming coves are nearly unspoiled—our favorites were Gorges du Loup, Plage Notre Dame, and the black and white sand beaches near Mas Du Langoustier (a hotel that’s definitely worth a meal).

On our wishlist: the soon-to-open Lannan Pantry, an offshoot of our favorite bakery in Edinburgh, Lannan Bakery. The forthcoming spot will be a deli and provisions shop, stocked with fresh produce, house-made sausage, biodynamic wines, a curated selection of home goods from European artisans, and—of course—the delicious breads that Lannan has become known for.
