Tim Wendelboe is a disco ball in a quiet, tucked-away courtyard. A place that manages to be so beautifully explosive, where coffee is brewed with such care and intention that its incredible aromatic complexity becomes accessible to everyone. I've been lucky enough to visit both the roastery and the café on several occasions over the years, and the consistency with which they roast, serve coffee, and welcome people is truly exemplary. A few days ago, I went back with Mari. We had their Gachatha (a washed-processed coffee from Kenya) as a pour-over, along with a delicious cascara tea. I loved seeing how, despite having become pretty much a must-visit spot for people working in specialty coffee, myself included, they've managed to nurture and keep alive a community of locals and regulars. But above all, I love, love, love the way Tim Wendelboe himself thinks about and approaches specialty coffee. In a recent interview, he put it beautifully: «I don’t think we’re the last link, I think we’re the first point of interest for people to get into coffee. We really have to make it fun and engaging for people to be curious about it». And that's exactly the kind of vision of coffee I feel compelled to support. Thank you, Tim. See you soon!
