My 10 Favorite Dishes in Paris, Curated by Chef Emmanuel Peña

In 2011, I graduated from law school in Mexico—and that very same day, I realized I didn’t want to be a lawyer. What I actually wanted was to work in kitchens, learn the craft, and one day be the chef at my own restaurant. So, I moved to Paris to begin the first chapter of that dream. Septime had just opened, and Le Chateaubriand was already six years in—two restaurants that would become huge sources of inspiration for me. To my surprise, though, it wasn’t only fine dining that shaped me. Paris had exactly the kind of cultural diversity I needed—a place where my own Mexican culture could collide with the way people cooked here, and something new and exciting could come out of that clash. In 2024, I finally opened Tarántula restaurant. Since that golden year of 2011, countless restaurants have opened, and just as many have closed. Along the way, I’ve had the chance to eat at—and be inspired by—so many of them. These are 10 of the dishes in Paris that have stayed with me most.

Lao Siam

Lao Siam · Paris

Crevettes Mi-Crues and the Nem Thadeua Crispy Rice at Lao Siam

Everyone knows this is my favorite restaurant in Paris. It’s the only restaurant in the world where I could order off the menu with my eyes closed. I highly recommend starting with the Crevettes mi-crues and the Nem Thadeua crispy rice. Mixing the sauce from the first dish into the crispy rice might just be what I want to eat before I die.

Le Servan

Ris de Veau at Le Servan

Le Servan is probably my second favorite restaurant in Paris, and the Ris de Veau is a dish you'll never forget. Chef Tatiana Levha changed the game with her incredible French cuisine, layered with a beautiful Asian touch. My wife and I got married here—one more reason this restaurant will always have a special place in my heart.

Le Dauphin

Tartare de Bœuf at Le Dauphin

Anthony Salomon, one of my favorite chefs, might be serving the best tartare de bœuf in the world—and he probably doesn’t even know it, because he’s one of the most humble people I know.

Clamato

La Clamatarte at Clamato

The freshness and quality of the seafood at this sister restaurant to Septime make it well worth the line that forms before opening. But my favorite dish here is actually the legendary dessert, La Clamatarte: a crisp, sweet pastry crust filled with rich maple syrup caramel and topped with vanilla whipped cream. It’s hands down the best dessert in the city.

Spider Crab Bisque at AT Restaurant

The first time I ate here, I thought I’d never eat that well again. But every time I come back, it’s somehow better than the last. My top dish here is, without question, the spider crab bisque with carrots. Chef Atsushi Tanaka is an inspiration to a whole new generation of chefs.

Pho at Loan

My wife would say this is our favorite restaurant because we eat here twice a week. We come for the pho and a few lighter dishes, and thanks to Yan’s warmth and hospitality, we always feel right at home. I get the pho fully loaded with extra tendon, and when I’m really hungry, I add extra bone marrow.

Fish Soup with Vinegar at Le Grand Bol (Belleville)

I eat at this restaurant near Belleville metro station at least once a week. Picking my top dish is genuinely hard—I’d say I have at least five favorites—but if I had to choose just one, it would be the fish soup with vinegar. I order it every single time.

Brutos

Dry-Aged Beef at Brutos

For over 10 years, Brutos has served some of the finest cuts of meat in Paris. Chef Lucas remains a legend and a constant source of inspiration. Whatever dry-aged cut hits the table, it’s always the best dish of the night.

Cod with an Emulsified Yeast Sauce and Smoked Milk at Eme

Eme is a young restaurant with a bright future ahead. Owners Mara and Nazareno have created something truly special. The dish that surprised me most this year is their cod with an emulsified yeast sauce and smoked milk. It’s definitely one of my top five dishes of all time.

Poêlée de Champignons (& more) at Bistrot des Tournelles

One of my favorite bistros, not only for Chef Geoffroy Langella’s excellent cooking, but also for the atmosphere, music, and soft, dim lighting. Sometimes I order the steak au poivre, sometimes the cordon bleu, and in winter, I love the daube de boeuf. But the one thing I always order is the poêlée de champignons.
